At home it might be a different story. But with that crowd and that offense...
...got to wrest Mo away from the home team.

I think almost every time you should defer. Sometimes it works out where you can get back-to-back possessions to end the second quarter and start the third quarter, which can be good if you get down early. Like against U of L, UK was down 31-0 and scored 2 quick TDs late in the second quarter. They got the ball to start the 3rd quarter, and if they could've scored on that drive, they would've made things a little interesting at 31-21.
But when you play a team with a good offense,like U of L or Florida, on the road, the only chance you have is to establish a running game to eat clock and keep the crowd out of the game. In those situations, it's imperative that you not fall behind early, otherwise you're going to be forced to throw the ball more, which is going to take you away from your gameplan. In those situations, if you have the option, you should probably take the ball, try to eat some clock, and get on the board first.

It's a no-brainer in my book, especially if you're a prohibitive underdog. Kick-off! At the very least you have a half of football to make some adjustments. Just because you score first doesn't mean you are going to throw the fave into some kind of funk. I could be wrong on this, but didn't UK score first on the Gators last year?
