The 'Naner Puddin' recipe is just dandy with or without the sour cream...it just gets 'kicked up a notch' with it! Glad everyone is enjoying the recipe idea. Who said they don't like to cook? Well this is as easy as pie....Caramel Pie that is! :)
Caramel Pie
2 cans sweetened condensed milk (fat free is OK too)
tub of cool whip
graham cracker pie crust
Place unopened cans of milk in saucepan, cover with water, put on the stove to boil. Leave at a low boil for 2 hours keeping cans covered with water. Set cans out to cool, about 15 minutes. Gently, ever so gently, open cans with the sharp end of a bottle opener to release pressure. Be so careful here because the caramel is very hot and will burn you and make a huge mess if it goes flying out of the can. Pour caramel into crust. Refrigerate overnight, then top with cool whip. De-lish!

Let me know how the Splenda works. I've been afraid to try it. I'm sure there is a Splenda book by now. The trick to eating sweets is don't overdo it and don't eat late at night. Caffeine, sugar and menapause (now there's a for ladies' only thing:P)cause me big problems as far as sleeping. Ambien :)

Cold Green Bean and Red Potato Salad
1 lb. fresh green beans
1 1/2-2 pounds red new potato
1 bunch green onion
8-10 tbsp apple cider vinegar
3-4 tbsp olive oil
crumbled bacon
salt, pepper, to taste
Boil the potato, while boiling, add salt to water and add green beans. Boil potatoes until fork-tender, and green beans until they are done, yet still crisp. (About 8 minutes total, adding the beans with about 4 mins. to go.)
While veggies are boiling, mince the green onion, and mix in a bowl with the oil, vinegar, and salt/pepper.
Remove vegetables, and shock them in ice water to stop them from continuing to cook. (Also helps keep the skin on the potatoes. You can also quarter the potatoes first, before cooking. Whatever you want to do.)
Rinse vegetables, quarter the potatoes, and cut the green beans in half. Toss in the vinaigrette, cover, and put in fridge.
Just before serving, add the crumbled bacon.
Good salad for the summer. Very light.

Miracle Whip Chocolate Cake
2 cups flour
1 cup sugar
1 1/2 teaspoons soda
1 1/2 teaspoons baking powder
3 to 4 tablespoons cocoa
1 cup cold water
1 cup Miracle Whip salad dressing (I use mayonnaise)
1 to 2 tsp. vanilla
Chocolate icing (recipe follows)
Mix together the flour, sugar, soda, baking powder and cocoa. Add water, salad dressing, and vanilla. Mix well and bake in a greased 9 by 13 inch baking pan at 350 degrees until done, about 25 minutes. While warm, top with chocolate icing.
Chocolate Icing
1 cup sugar
4 tablespoons cocoa
1/4 cup milk
1/4 cup butter
1 to 2 teaspoons vanilla
Chopped pecans
Boil sugar, cocoa, milk, and butter 1 minute over low heat. Beat until partially cooled. Add vanilla and nuts. Spread on cake while hot.
--since the cake is left in the pan and the icing poured on top, I use a pyrex glass baking pan rather than aluminum..it looks better.

Real banana pudding is made like this
1 can pet milk
1 stick butter
heaping spoon of flour
1tsp vanilla
Cook on low heat till it thickens, and pour over vanilla waffers and bananas.
You make cocoanut pie the same way, only add cocoanut after the pudding has thickened, pour into lightly baked pie shells, cover with mariange and brown.

Red Velvet Cake.
Not that hard once you get the hang of it. A little time consuming. Enjoy.
RED VELVET CAKE[/b]
½ CUP BUTTER 2 OZ RED FOOD COLORING
2 WHOLE EGGS 1 CUP BUTTERMILK
2 TBSP (heaping) COCOA 1 TSP. VANILLA
2 ¼ CUP CAKE FLOUR 1 TSP SODA
½ TSP SALT 1 TBSP WHITE VINEGAR
1 ½ CUP SUGAR
Cream shortening, with sugar and add eggs. Make a paste of food coloring and cocoa. Add to the creamed mixture. Add alternately buttermilk with sifted flour and salt. Then add the vanilla. Add soda to vinegar. HOLD OVER THE BOWL AS IT FOAMS. Add soda and vinegar, blending instead of beating. Bake 25 to 30 minutes in 2 8-inch greased and floured pans. Cool on rack. Split layers in to 2. Or use 3 pans.
FROSTING[/b]
3 TBSP FLOUR 1 CUP MILK
1 CUP SUGAR 1 TSP VANILLA

Blend the flour in a little of the cold milk to get lumps out. Add rest of milk and cook, stirring constantly until very thick. Cook flour and milk until very thick. Cool. Frost between the 4 layers and top and sides.
Keep cake refrigerated.

My mom also made her banana pudding from stratch. It's different, though, as she used graham crackers, instead of vanilla wafers, and I've always done the same. Too, like her, I tend to fix it while the rest of the family is eating dinner, as it tastes best right off the stove. My family encourages me not to do that, but I must follow my dear mom's example. :)It is quite easy. It's also very sweet, but my family and guests seem to enjoy it. :)
Mother's Banana Pudding
Cover the bottom of a 9x13 pan with a layer of graham crackers. Slice 21/2 bananas and cover the crackers. Then mix 2 cups sugar and 2T flour in a skillet. Then add two beaten eggs, mixing thoroughly. Next, turn on the heat (medium heat) and slowly add 2 cups milk. As the mixture begins to thicken, add 2T butter or margarine and 2t vanilla. The mixture will be only slightly thickened. Pour it over the first layer of crackers and bananas. Make a second layer of crackers, slice and add 2 1/2 more bananas, and put the rest of the sauce on the top. Add whipped creme for those who desire it on top of their portion. :)
This recipe is obviously easily memorized, too, as everything is in two's, except for the five bananas. I hope you enjoy! :)

Lemon Bars
Makes 20 squares
Crust
1/2 lb. unsalted butter, room temperature
1/2 cup granulated sugar
2 cups all-purpose flour
1/8 tsp. salt
Filling
6 extra-large eggs, room temperature
2 ¾ cups granulated sugar
1 Tbs. grated lemon zest
1 cup freshly-squeezed lemon juice (4-6 lemons)
1 cup all-purpose flour
Confectioners' sugar, for dusting
In a medium bowl, cream the butter and sugar until light and fluffy. Combine the flour and salt, and with the mixer on low, add to the butter until just mixed. Can also be mixed by hand but easier in processor
Dump the dough onto a well-floured board and gather into a ball. Flatten the dough with floured hands and press it into a 9x13x2-inch baking sheet, building up a 1/2-inch edge on all sides. Wrap and chill dough for one hour.
Preheat the oven to 350ºF. Bake the crust for 15-20 minutes until very lightly browned. Let cool on a wire rack while you prepare the filling. Leave the oven on.
In a medium size bowl, whisk together the eggs, sugar, lemon zest, lemon juice, and flour. Pour over the crust and bake for 30-35 minutes, until the filling is set. Let cool to room temperature. Cut into squares and dust with confectioners' sugar before serving.

Yes. The lady that owned the Bed & Breakfast in which we stayed prepared this on two nights we were there.
I was skeptical, but it was really good and thirst-quenching on a hot, steamy day by the beach.

Ok...I'm not much of a 'measuring cup girl' so I'm just going to give approximates of one of my throw it together favorites and say adjust to your liking.
I'm a vegetarian so I like cold bean salads as a good light lunch and I have 2 variations I make fairly regularly which are similar.
Black Bean & Tomato Salad
1 can of black beans drained and rinsed
1 small can of diced tomatoes drained (sometimes I use Rotel tomatoes if I'm looking for a little kick in my salad)
small onion chopped
Mix those three and pour over a little Red Wine vinegar and Olive Oil as a dressing then refridgerate for at least 2 hours.
(told you I don't do measuring...sorry)
The one variation I do on that most often is a black-eyed pea one...for it I don't use the tomato...although you could...but I add chopped bell pepper to the chopped onion and use regular distilled vinegar.

For those of you on Weigh Watchers....like me:
Chocolate cake...
1 box of dark chocolate cake mix...(the super mist is best)
1 can of Diet Cherry Coke
Fat Free Caramel Topping
Fat Free Cool Whip
Mix the soda with the cake mix. Add no other ingredients. Place in a greased casserole dish. Bake per directions...usually 30 mins at 350. (Use the woodentoothpick method to check if done)
Usingthe handle of a plastic fork/knife...poke several holes on top of the cake. Drizzle the caramel topping over the cake. Serve with a dollop of Cool Whip.
Real, real moist and delicious. A big slice is only about 5 points.

Maker's Mark Vanilla Creme Brulee'
A littel preparing is needed as well as patience.
9 egg yolks
3/4 cup superfine white sugar plus 6 tablespoons
1 quart heavy cream
1 vanilla bean softened by soaking in Maker's Mark Bourbon for at least 24 hrs.
Preheat oven to 325 degrees. In a large bowl, cream together egg yolks and sugar with a whisk until the mixture is pale yellow and thick.
Pour cream into a medium saucepan over low heat. Using a paring knife, split the vanilla bean down the middle, scrape out the seeds and add them to saucepan then add the whole bean. Bring cream to a brief simmer, do not boil or it will overflow. Remove from heat, remove vanilla bean and temper the yolks by gradually whisking the hot bourbon vanilla cream into yolk and sugar mixture. Do not add hot cream too quickly or the eggs will cook.
Divide custard into 6 (6-ounce) ramekins, about 3/4 full. Place ramekins in a roasting pan and fill pan with enough water to come halfway up the sides of the ramekins. Bake until barely set around the edges, about 40 minutes. You may want to cover loosely with foil to prevent browning. Remove from oven and cool to room temperature. Transfer the ramekins to the refrigerator and chill for 2 hours.
Sprinkle 1 tablespoon of sugar on top of each chilled custard. Hold a kitchen torch 2 inches above surface to brown the sugar and form a crust. Garnish with cookies and fresh fruit, drizzle lightly with the bourbon you soaked the bean(s)in. Serve at once.
Variation: Before dividing into ramekins: add 3 ounces of shaved dark chocolate for chocolate creme brulee, you can add Maker's Mark to the chocolate wihil tempering; add 3 slices of orange peel soaked in Maker's Mark for orange creme brulee. Let steep 20 minutes to infuse the flavor. Strain out the orange peel before baking.
Prep Time: 30 minutes
Cook Time: 2 hours 40 minutes
Maker's Mark Chocolate Pecan Pie
1 cup sugar
1 cup light corn syrup
1/2 cup butter or margarine
4 eggs, lightly beaten
1/4 cup Maker's Mark
1 teaspoon vanilla extract
1/4 teaspoon salt
1/2 cup semisweet chocolate chips
1 cup pecan pieces
1 unbaked pastry shell fitted into a 9 inch deep-dish pie plate
Preheat oven to 325 degrees F.
Combine first 3 ingredients in a small sauce pan and cook over medium heat, stirring constantly, until butter melts and sugar dissolves.
Cool slightly.
Beat eggs, Maker's Mark, vanilla, and salt in a large bowl gradually add sugar mixture, beating well with a wire whisk.
Stir in chocolate chips and pecans; pour into pastry shell.
Bake for 50-55 minutes, or until set.
Serve warm or chilled
Yield: 1 deep dish pie
Bourbon Cherry Chocolate Ice Cream
Soak 1/3 cup dried cherries in Maker's Mark overnight; you only need to use enough bourbon to cover the cherries (assumes ice cream maker with 1 quart capacity; adjust accordingly). Follow chocolate ice cream recipe for any home ice cream maker (my wife and I like the Ben & Jerry's recipe, it's available in their cookbook). Drain the cherries well (too much bourbon will prevent the ice cream from freezing). Right before the ice cream is almost set, mix in the drained cherries. Delicious!
Star Hill Pears
4 cups sugar
2 cups water
approx. 1/8 teaspoon sorghum or molasses
6 pears (at least)
2 cups Maker's Mark Bourbon Whiskey
approx. 1 teaspoon cardamom
Premium (French) vanilla ice cream
In a saucepan over medium heat, create a syrup by heating water and adding sugar, stirring constantly until all of the sugar is dissolved.
Since the strength of molasses is variable, add molasses dropwise to syrup until the flavor of Cracker Jack is reached, being careful not to be scalded tasting the hot liquid.
Simmer the flavored syrup, covered, stirring occasionally.
Peel, quarter and core only the best pears, cutting out any bruises, avoid mealy specimens. (Newly fallen, tree-ripened pears are optimal.) Add pear slices to the flavored syrup. Carefully add Maker's Mark Bourbon as the heat will cause the flammable alcohol to boil off very quickly. Add the cardamom.
Cover saucepan. Simmer over medium low heat. Stir occasionally.
Once the pears are cooked through such that a fork will penetrate easily. Remove the pears from the syrup with a slotted spoon.
Additional batched of pears may be prepared, adding more Maker's Mark Bourbon and cardamom with each batch.
Once all the pears are cooked and removed from the syrup, heat syrup uncovered over medium-high heat, stirring constantly, to thicken syrup into a rich amber sauce.
Serve pears and sauce over vanilla ice cream.
S-IV Glazing (for Blueberry Scones)
Ingredients:
1/2 cup confectioner's sugar
1 tsp. Maker's Mark
1 tsp. rich cream
Directions: mix Maker's Mark into sugar to make paste. Add cream to smooth'n out. Spread on warm scones. Enjoy!
Bourbon Icing
1 lb. of powdered sugar (sifted)
1 stick of butter melted
2 squares of unsweetened chocolate
1 tsp. vanilla
1/4 cup Maker's Mark
Melt butter and chocolate squares together. Add vanilla and bourbon. Gradually add powdered sugar. If icing is too stiff to spread, add more bourbon, one teaspoon at a time, until it's the right consistency to spread.
Maker's Mark Iced Brownies
4 squares unsweetened chocolate (melt & cool)
1/2 cup butter (softened)
1/2 cup margarine (softened)
2 cups sugar
4 eggs
2 tsp. vanilla
1-1/2 cup flour + 1 Tbs Flour mixed with 1 tsp. baking powder
1/2 cup Maker's Mark
1 cup chopped pecans
Cream butter, margarine, sugar and add melted chocolate. Beat in eggs one at a time. Add vanilla, gradually beat in flour and baking powder mixture alternating with bourbon. Add 1 Tbs. of flour mixture last. Fold in chopped pecans.
Pour into a greased-lightly floured 9x13 pan. Bake at 350ƒ for about 20 minutes. Stick with toothpick in the middle to make sure it's done. Remove from oven & cool. The brownies will fall slightly. Top with Bourbon Icing (below).
